Creamy Mushroom and Spinach Pasta Recipe


 Ingredients:

  • 8 ounces (about 225g) pasta of your choice (such as fettuccine or penne)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 8 ounces (about 225g) mushrooms, sliced (use any variety you prefer)
  • 3 cups fresh spinach leaves
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Red pepper flakes (optional, for heat)
  • Chopped fresh parsley (for garnish)

Instructions:

1. Cook the Pasta:

  • Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

2. Sauté Mushrooms and Garlic:

  • In a large skillet, heat olive oil over medium heat.
  • Add minced garlic and sauté for about 30 seconds until fragrant.
  • Add the sliced mushrooms to the skillet and cook, stirring occasionally, until they are tender and browned, about 5-6 minutes.

3. Add Spinach and Cream:

  • Add the fresh spinach leaves to the skillet with the mushrooms and garlic. Cook for 1-2 minutes until the spinach wilts.
  • Pour in the heavy cream, stirring constantly. Let it simmer for 2-3 minutes until slightly thickened.

4. Combine Pasta and Sauce:

  • Reduce the heat to low and add the cooked pasta to the skillet with the creamy mushroom and spinach mixture.
  • Add the grated Parmesan cheese, tossing everything together to combine. If the sauce is too thick, you can add a splash of reserved pasta water to loosen it up.
  • Season with salt, pepper, and red pepper flakes (if using), adjusting to your taste preferences.

5. Serve and Garnish:

  • Serve the Creamy Mushroom and Spinach Pasta immediately, garnished with chopped fresh parsley for a burst of freshness.
