- 3 cups fresh spinach leaves
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Red pepper flakes (optional, for heat)
- Chopped fresh parsley (for garnish)
Instructions:
1. Cook the Pasta:
- Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.
2. Sauté Mushrooms and Garlic:
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Add the sliced mushrooms to the skillet and cook, stirring occasionally, until they are tender and browned, about 5-6 minutes.
3. Add Spinach and Cream:
- Add the fresh spinach leaves to the skillet with the mushrooms and garlic. Cook for 1-2 minutes until the spinach wilts.
- Pour in the heavy cream, stirring constantly. Let it simmer for 2-3 minutes until slightly thickened.
4. Combine Pasta and Sauce:
- Reduce the heat to low and add the cooked pasta to the skillet with the creamy mushroom and spinach mixture.
- Add the grated Parmesan cheese, tossing everything together to combine. If the sauce is too thick, you can add a splash of reserved pasta water to loosen it up.
- Season with salt, pepper, and red pepper flakes (if using), adjusting to your taste preferences.
5. Serve and Garnish:
- Serve the Creamy Mushroom and Spinach Pasta immediately, garnished with chopped fresh parsley for a burst of freshness.
