Ingredients:
For the Quinoa:
- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- Pinch of salt
For the Salad:
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped

Instructions:
1. Cook the Quinoa:
- In a medium saucepan, bring the water or vegetable broth to a boil.
- Add the rinsed quinoa and a pinch of salt.
- Reduce the heat to low, cover, and simmer for 15-20 minutes or until the quinoa is cooked and the liquid is absorbed.
- Once cooked, remove from heat and let it cool.
2. Prepare the Salad Ingredients:
- In a large mixing bowl, combine the cooked and cooled quinoa, diced cucumber, diced red bell pepper, finely chopped red onion, chopped parsley, chopped mint, and lemon zest. Toss gently to mix.
3. Make the Lemon Herb Dressing:
- In a small bowl or jar, whisk together olive oil, lemon juice, red wine vinegar, minced garlic, Dijon mustard, salt, and pepper until well combined.
4. Assemble the Salad:
- Pour the Lemon Herb Dressing over the quinoa and vegetable mixture.
- Toss the salad gently until everything is coated evenly with the dressing.
5. Chill and Serve:
- Refrigerate the Lemon Herb Quinoa Salad for at least 30 minutes before serving to allow the flavors to meld.
