Ingredients:
For the Tart Crust:
- 1 ½ cups all-purpose flour
- ½ teaspoon salt
- ½ cup unsalted butter, chilled and cubed
- 4-5 tablespoons ice water
For the Filling:
- 2 large onions, thinly sliced
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup grated Gruyere cheese
- 2 eggs
- 1 cup heavy cream or half-and-half
- Fresh thyme leaves for garnish (optional)
Instructions:
1. Prepare the Tart Crust:
- In a food processor, pulse together the flour and salt. Add the chilled, cubed butter and pulse until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, pulsing until the dough comes together.
- Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
2. Caramelize the Onions:
- In a large skillet, melt the butter and olive oil over medium-low heat.
- Add the thinly sliced onions and cook slowly, stirring occasionally, until they are caramelized and golden brown, about 30-40 minutes.
- Season the caramelized onions with salt and pepper to taste. Set aside to cool.
3. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
4. Roll out the Tart Crust:
- On a lightly floured surface, roll out the chilled dough to fit a tart pan or a pie dish.
- Gently press the dough into the pan, trimming any excess from the edges.
- Prick the bottom of the crust with a fork.
5. Assemble the Tart:
- Spread the caramelized onions evenly over the tart crust.
- Sprinkle the grated Gruyere cheese over the onions.
6. Prepare the Custard:
- In a mixing bowl, whisk together the eggs and heavy cream (or half-and-half) until well combined.
- Pour the egg and cream mixture evenly over the onions and cheese in the tart crust.
7. Bake the Tart:
- Place the assembled tart in the preheated oven.
- Bake for 25-30 minutes or until the tart crust is golden and the filling is set and slightly browned on top.
8. Garnish and Serve:
- Once baked, remove the tart from the oven and let it cool slightly.
- Garnish with fresh thyme leaves if desired.
- Slice the Caramelized Onion and Gruyere Tart and serve it warm or at room temperature as a delightful appetizer or light meal.
