Caramelized Onion and Gruyere Tart Recipe

 

Ingredients:

For the Tart Crust:

  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup unsalted butter, chilled and cubed
  • 4-5 tablespoons ice water

For the Filling:

  • 2 large onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup grated Gruyere cheese
  • 2 eggs
  • 1 cup heavy cream or half-and-half
  • Fresh thyme leaves for garnish (optional)

Instructions:

1. Prepare the Tart Crust:

  • In a food processor, pulse together the flour and salt. Add the chilled, cubed butter and pulse until the mixture resembles coarse crumbs.
  • Gradually add ice water, one tablespoon at a time, pulsing until the dough comes together.
  • Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

2. Caramelize the Onions:

  • In a large skillet, melt the butter and olive oil over medium-low heat.
  • Add the thinly sliced onions and cook slowly, stirring occasionally, until they are caramelized and golden brown, about 30-40 minutes.
  • Season the caramelized onions with salt and pepper to taste. Set aside to cool.

3. Preheat the Oven:

  • Preheat your oven to 375°F (190°C).

4. Roll out the Tart Crust:

  • On a lightly floured surface, roll out the chilled dough to fit a tart pan or a pie dish.
  • Gently press the dough into the pan, trimming any excess from the edges.
  • Prick the bottom of the crust with a fork.

5. Assemble the Tart:

  • Spread the caramelized onions evenly over the tart crust.
  • Sprinkle the grated Gruyere cheese over the onions.

6. Prepare the Custard:

  • In a mixing bowl, whisk together the eggs and heavy cream (or half-and-half) until well combined.
  • Pour the egg and cream mixture evenly over the onions and cheese in the tart crust.

7. Bake the Tart:

  • Place the assembled tart in the preheated oven.
  • Bake for 25-30 minutes or until the tart crust is golden and the filling is set and slightly browned on top.

8. Garnish and Serve:

  • Once baked, remove the tart from the oven and let it cool slightly.
  • Garnish with fresh thyme leaves if desired.
  • Slice the Caramelized Onion and Gruyere Tart and serve it warm or at room temperature as a delightful appetizer or light meal.
