Preparing Sushi Rice:
- Rinse the sushi rice in cold water until the water runs clear. Drain the rice thoroughly.
- Combine the rinsed rice and water in a rice cooker or pot and cook according to package instructions.
- In a small saucepan, combine the rice vinegar, sugar, and salt. Heat over low heat until the sugar and salt dissolve. Set aside to cool.

- With wet hands, spread a thin layer of sushi rice evenly over the nori sheet, leaving a small border at the top.
- Arrange slices of fish, avocado, cucumber, or any desired fillings on the bottom third of the nori sheet.
- Using the bamboo mat or towel, tightly roll the nori sheet over the fillings, pressing gently but firmly as you roll to seal the sushi roll.
- Once rolled, use a sharp knife to slice the roll into bite-sized pieces.
