Savory Sesame Pasta Chicken Salad

 


An invigorating airy pasta salad with a delectable Oriental touch. Perfect for a summer barbecue or outing. It tastes exquisite immediately, and even more delightful if you can afford it the luxury of steeping for a while.

Ingredients:

  • A teaspoon of sesame oil
  • Three cups of shredded, cooked chicken breast meat
  • Half a cup of vegetable oil
  • A third cup of chopped green onion
  • A quarter teaspoon of ground black pepper
  • A third cup of rice vinegar
  • Half a teaspoon of ground ginger
  • A package of bow tie pasta (16 ounces)
  • A quarter cup of sesame seeds
  • A third cup of light soy sauce
  • Three tablespoons of white sugar
  • A third cup of freshly chopped cilantro

Directions:

  1. Prepare a skillet on medium-high heat. Add sesame seeds and stir occasionally until they turn lightly toasted. Remove from heat and set aside.
  2. Boil a large pot of lightly salted water. Add pasta and cook for 8 to 10 minutes until it's al dente. Drain the pasta and rinse it under cold water until it cools. Then, transfer it to a spacious bowl.
  3. In a tightly sealed jar, mix together vegetable oil, soy sauce, vinegar, sesame oil, sugar, sesame seeds, ginger, and pepper. Shake the jar vigorously.
  4. Pour the sesame dressing over the pasta and toss gently to ensure an even coating. Add chicken, cilantro, and green onions, and mix them in delicately.
