Homemade Apple Pie

 

Ingredients:

For the Pie Crust:

  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, cold and cubed
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 6-8 tablespoons ice water

For the Apple Filling:

  • 6-7 large apples (such as Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • Zest of 1 lemon
  • 2 tablespoons unsalted butter, cut into small pieces

Instructions:

Prepare the Pie Crust:

  • In a large mixing bowl, combine the flour, salt, and granulated sugar. Add the cold, cubed butter.
  • Use a pastry cutter or two forks to cut the butter into the flour mixture until it resembles coarse crumbs.
  • Gradually add ice water, one tablespoon at a time, mixing with a spatula until the dough just begins to hold together.
  • Divide the dough in half, shape each half into a flat disc, wrap them in plastic wrap, and refrigerate for at least 1 hour.

Make the Apple Filling:

  • In a separate bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, cloves, flour, lemon juice, and lemon zest. Toss until the apples are evenly coated. Let it sit for 15-20 minutes.

Assemble the Pie:

  • Preheat your oven to 375°F (190°C).
  • On a floured surface, roll out one disc of the chilled dough into a circle about 12 inches in diameter. Carefully transfer it to a 9-inch pie dish.
  • Add the apple filling into the pie crust, spreading it evenly. Dot the top with small pieces of butter.
  • Roll out the second disc of dough and place it over the apple filling. Trim excess dough and crimp the edges to seal. Cut a few slits in the center to vent steam.
  • Optional: Brush the top crust with milk or beaten egg and sprinkle with sugar for a golden crust.
  • Place the pie on a baking sheet (to catch any drips) and bake for 50-60 minutes, or until the crust is golden brown, and the filling is bubbly.
  • Allow the pie to cool on a wire rack for at least 2 hours before slicing and serving.
